This past week we got the chance to sit down with one of our founders, Ernesto Jimenez. Ernesto has been involved all 10 years, and knows the ins and outs of of our Zocalo Family. We loved chatting with him about the secrets behind the lasting success of Zocalo.
What is the secret to Zocalo’s success?
We had to look at success long term, we didn’t look at fads and what was cool- we tried to keep a sense of timeless quality in our food and locations that ultimately attracts (and keeps) people. We stay relevant, but it’s always on that path of quality. Times are changing and we change along with it, but there are a few ideals that we wont give up.
What makes the Zocalo team a family?
Our definition of family style restaurant is taking care of our employees. Whether it’s taking care of their families or helping them through difficult changes, they can always come back and feel like they’re home. We prioritize relationships and try and make the best decisions we can for our staff. We give as much as we can, whenever we can.
How has Zocalo Impacted the community?
There are a lot of Mexican food restaurants in our community, and when we first started we had to find a space that hadn’t been invaded yet. We try to take a new look at Mexican cuisine, and also prioritize quality in our atmosphere. We are a family, and our goal is to make our customers a part of that. Because of this I think the community sees us as a pillar, an unchanging place of family and quality.
What kinds of things do you do to encourage learning and creativity?
We love spending time teaching people. We train people and then get out of the way so they can grow and learn for themselves. We love providing resources so that they can learn and take ownership of their craft.
Ernesto has been such a support to us here at Zocalo, and we are so thankful for his influence and insight over the years. We look forward to many years to come! Last Saturday we got a chance to celebrate Ernesto’s birthday and our 10 year anniversary with the Zocalo crew.
